Dinner tonight

IMG_5311.jpg

We’re going to continue with the italian theme this week, since i’ve gotten a good fill of grandma. This is what’s for dinner tonight. I’m giving the Coley’s Crumbs a break this evening. Yes- I said it, a break. I’ve been craving this salad for a few days now, it's my prosciutto and burrata salad. It's very simple, yet satisfying. What we have here is romaine lettuce, prosciutto very thinly sliced(you should be able to see through it) and the lovely burrata. I dress it very simply with olive oil and balsamic vinegar then, sprinkle over garlic powder, italian seasoning, hot pepper flakes, salt & pepper. Finito! Enjoy with a glass of vino rosso (red wine) and mangia.  For those of you who don’t know what Burrata is, well let me tell you. Burrata is t’s own very special type of mozzarella cheese.  It’s freshly handmade mozzarella then,  filled with stracciatella (stringy curd) and cream. It’s absolutely delicious and light, not heavy at all.
