Stuffed Sch-carole!

The video explains it all! Making stuffed escarole with my dear grandmother and so happy that we got it all on video.  If you’re Italian, then you definitely know what escarole is, because you probably had it for dinner at least once a week, or maybe that was just my house. For those of you who don’t know, let me explain -  It’s a leafy green that is lighter and more tender than romaine lettuce and is usually used in soups or in a dish commonly known as escarole and (cannellini) beans.
