This weekend both of my children had their First Holy Communion. What an important day for a child growing up in a catholic household.  I can’t even begin to explain how proud my husband and I are of them. Our hearts were exploding with happiness, pride and love. The ceremony was a bit different than it normally would’ve been due to Covid, but precious nonetheless.

For those of you who know me, know that any event to be celebrated wouldn’t be whole without a feast at home and of course a feast is what we had. We had all of the kids faves, to include a recipe that had Coley’s Crumbs! That wasn’t even planned, but last minute my son wanted my stuffed mushrooms and they typically have krispie rice cereal to mimic tempura flakes, but I ran out. So, I used my tried and true Coley’s Crumbs. The recipe never tasted better, as per my son Nicky. That recipe is an oldie but a goodie! You can find that in my book “Secrets of My Food Affair, A Gluten Free Romance”. For other recipe’s go to my website nicholecampo.com, while you’re there don’t forget to order your Coley’s Crumbs!
