Boar Pasta!
The most delicious slow cooked boars meat pasta sauce over perfectly cooked al dente pasta and always gluten free of course. Check out my instagram @nicholecampo for a video of the recipe!
Recipe
1tbsp garlic powder
1tbsp onion powder
1tbsp smoked paprika
1tbsp chili powder
1 ½ tbsp salt
1 tbsp white pepper
1- 4lb leg of boar, roasted low and slow
3tbsp butter + 1 tbsp
2 tbsp olive oil
1 large onion, chopped
2 large carrots, chopped
2 large celery stalks, chopped
2 garlic cloves, minced
½ cup red wine
1 can grape tomatoes, skin pulled off
½ cup Parmesan cheese + more for sprinkling over pasta
Salt & pepper, taste
Preheat oven to 300 degrees
Mix together the first six ingredients and rub all over the boar leg, place in a large roasting pan, cover with foil and roast for 4 ½ - 5 hours. Take out, allow to cool for 20 minutes and pull meat off bone and set aside.
Place a large pan over medium heat, add 3 tbsp butter and oil, allow to melt together. Add in onion, carrots and celery and saute for 5-7 minutes until onion is translucent and veg is tender. Mix in garlic and cook until it is fragrant, about 30 seconds. Deglaze pan with wine, scraping all the brown bits off the bottom of the pan. Add in grape tomatoes and allow to cook down, about 5 minutes. Mix in butter and place boar meat into sauce. Sprinkle in parmesan cheese and mix until all is incorporated.
Serve over pasta and enjoy!
