1 cup of strawberries, rinsed

1 tsp honey

1 cup plain Greek yogurt


1 banana, peeled and roughly chopped


1 cup blackberries, rinsed 


1 tsp gluten free vanilla extract

Take the strawberries and honey and pulse them in the food processor until there aren’t any lumps. Next strain the mixture to remove the seeds. Place them into a bowl and set-aside.

Second layer, place the yogurt and bananas in the food processor and pulse until smooth. Place into a bowl and set-aside.

Last layer add the blackberries and vanilla extract to the food processor and pulse until the lumps are gone. Strain to remove seeds. Place into a bowl and set-aide.

To assemble:

Spoon 2 teaspoons of each mixture into each mold, starting with strawberries and ending with blackberries. Use your judgment on portioning to ensure even colors. 
Freeze the popsicles for at least 2 hours and when ready to enjoy run them under warm water to loosen from molds. Enjoy!


For the molds:

If you don’t have them use clear cups and stick popsicle sticks in them after they have been in the freezer for 30 minutes. Right now is the time of year where you can find popsicle molds everywhere. The ones in the picture are from Home Goods.

It seems like a lot of work, but it’s really not. When you have the kids involved, it's time well spent. Have fun!
