Apple Streusel Bread

2/3 cup brown sugar, divided

1-½ teaspoons ground cinnamon

1/3 cup white sugar

¼ cup + 1 tablespoon butter melted

¼ cup cinnamon applesauce

2 eggs beaten

1 teaspoon gluten-free vanilla extract

1-½ cups white rice flour

2 teaspoons baking powder

1 teaspoon salt

1/3 cup almond milk

1 large granny smith apple, peeled and small diced

Preheat oven to 350 degrees

Grease an 8 x 4 loaf pan and set aside.

Combine 1/3-cup brown sugar and cinnamon and set aside. In a small bowl whisk together remaining brown sugar, white sugar, ¼ cup melted butter, applesauce, eggs and vanilla extract. Set aside.

In a large bowl combine white rice flour, baking powder and salt. Make a well in the flour mixture and pour in the sugar, butter mixture. Gently mix and slowly incorporate almond milk. Continue mixing until just combined, be careful not to over mix. Let the mixture rest for 5 minutes.

Transfer half of batter into greased loaf pan and sprinkle with half the diced apples and half of the brown sugar cinnamon mixture. Next, gently incorporate the remaining apples to the other half of the batter and pour over the existing batter in loaf pan.

Lastly sprinkle with remaining brown sugar, cinnamon mixture and drizzle with 1 tablespoon of melted butter.

Bake bread for 40 to 45 minutes until golden brown and toothpick inserted comes out clean.
