Fire Roasted Artichokes with Herby-Anchovy Aioli

Calling all artichoke lovers...These are a must try!! Halved fire roasted artichokes, drizzled with butter, served with an herbaceous anchovy (don’t be afraid of it, trust me) aioli. OMG are they to die for!! I’m drooling writing this.

Recipe

3 Artichokes, tops cut off,  leaves trimmed and stem peeled

1 stick salted butter, melted

1 cup mayo

2 tbsp tarragon, leaves stripped off stem and finely chopped

2 anchovies, minced

2 tbsp lemon juice, about ½ lemon 

Salt and pepper to taste


In a medium bowl mix together mayo, tarragon, anchovies, lemon juice, salt & pepper. Place in the fridge while preparing the artichokes. The longer it sits the better it gets.

Once artichokes are prepped place artichokes in a large pot, fill with water until it reaches halfway up the artichoke. Cover and bring to a boil over medium high heat. Let boil for about 15 to 20 minutes, until a fork inserted into the artichoke heart is tender. 

Preheat the grill to medium high so the grates are nice and hot. Next cut artichokes in half and scrape out the fuzzy hair found on top of the artichoke heart and discard. Next, place artichokes face down on the grill and allow flame to work it’s magic, about 5-7 minutes. Take off the grill, artichokes should have char marks all over. Immediately drizzle with melted butter and serve with aioli.
